Butterfly Blue Pea Ice Lemon Tea

Watch nature perform a little magic — this blue lemongrass tea turns purple with a squeeze of lemon.

Ingredients

  • 1 pot water
  • 2 tsp HAK’s Butterfly Blue Pea Powder
  • Juice of 1 lemon
  • 1 tbsp white sugar (or to taste)
  • Ice cubes
  • 2–3 stalks lemongrass, bruised

Instructions

  1. Simmer lemongrass, sugar and blue pea powder 20–30 min.
  2. Strain and cool.
  3. Serve over ice with lemon juice for the colour-change effect.
